2002 Donedei Cabernet Sauvignon
Production
After harvest, these grapes were cold-soaked for 3-4 days depending upon lot. After inoculation with a proprietary yeast blend, the wine was fermented to dryness. One hundred percent free-run juice was then added to barrel were it was aged for approximately 24 months prior to bottling. An additional 4 months of bottle age was given to this wine before release.
Tasting Notes
Rich and opulent, this Cabernet Sauvignon possesses great strength, complexity, and integration. Round, black-fruit flavors of blackberry and black cherry are nicely balance with smooth tannins and a long, supple finish. Truly a hedonistic wine for the senses! Enjoyable now, this wine will continue to age gracefully for 10-15 years. |
