2005 Merlot
Tasting notes: A bold and assertive Merlot, displaying dark fruits of black cherry and plum on the nose, along with dusty sage, chocolate and espresso. Extremely expressive, this wine is both dense and chewy while possessing a supple and silky mouthfeel. Finely integrated oak and tannins lead to a very long, lingering finish. Enjoyable now, this wine will continue to age gracefully for 10-15 years.
Production: After harvest, these grapes were cold-soaked for 3-4 days depending upon lot. The wine was fermented to dryness after inoculation with a proprietary yeast blend. One hundred percent free-run juice was then added to barrel, where it was aged for approximately 29 months before bottling. An additional 13 months of bottle age was given to this wine prior to release.
