2006 Cabernet Sauvignon

Tasting notes: A beautifully elegant Cabernet Sauvignon. The fruit is luscious and assertive without beingĀ overpowering. Dark cherry and spice are evident as well as espresso and plum. The silky mouthfeel is complemented by lingering smooth tannins that lead to a long lovely finish. An exceptional Cabernet Sauvignon to complement food or on its own. Should age very well but is enjoyable now.

Production: After harvest, these grapes were cold-soaked for 3-4 days depending upon lot. The wine was fermented to dryness after inoculation with a proprietary yeast blend. One hundred percent free-run juice was then added to barrel, where it was aged for approximately 23 months before bottling. An additional 9 months of bottle age was given to this wine prior to release.
